Cool holds the sale in escrow and pays you out after a safety window (a few days by default, varying by method: Pix releases faster, card takes longer due to chargebacks). The payout is automatic once it clears; if there isn't balance at that moment, it goes into a queue and is retried. You track it all in the Payouts/Finance tab of Admin.
